One More Peach Post

Several weeks ago my mother-in-law asked me what I did with all of the peaches that I picked this summer.  She had enjoyed a few of them herself and has been quite curious to what I might do with the rest.  Of course I made peach salsa with some of them, but the rest I put up for pies, cobblers, and maybe a bit of winter jam.
Mother-in-law had surgery last week so for dessert one night after I had cooked for her I served up some of those delicious peaches in the form of dumplings so she could savor the sweet flavor of my peaches. Audley in all of his silliness asked me if that was anything like chicken-n-dumplings and I responded with “now that you mention it, yes!”  It’s the same concept; you make a peach soup and add the dough.
Here are your ingredients:
2 cups sugar
3 tablespoons butter
4 cups hot water
2 quarts fresh sliced peaches, or frozen thawed
2 cups plain flour
4 teaspoons baking powder
1 teaspoon salt
3 tablespoon sugar, optional
1/2 cup whipping cream, to use as needed
cinnamon sugar, optional
 
 
 
Prep:In a large pan over medium heat, combine 2 cups sugar, butter, and hot water. Add peaches and bring to a boil.
 
 
 
 
In a medium bowl, combine flour, baking powder, salt, & sugar; stir in cream to form a stiff batter. Drop small spoonfuls (or large if you want big dumplings) of batter onto the boiling fruit. Cover and cook for about 20 minutes. 
 
 
 
 
 
Spoon out dumplings and fruit into bowl. 
 
 
 
 
 
 
 
 
 
If desired, sprinkle with a little cinnamon sugar and serve with whipped cream or ice cream. Serves about 12.
 
 
 Since I was taking this dish to someone’s home, I thought it would be fun to make up individual canning jars of dessert for everyone.  Not only is it rather pretty, it makes it super easy to transport!
I am finishing up some of my summer canning this week since my garden is just about spent.  After the heat and drought conditions of the last six weeks and the fact that football kick-off is upon us, I am so ready for autumn!
