the Yummiest Time of the Year!

One of the highlights of the Christmas season is all of the baking that goes on here in our kitchen.  With parties to host (as well as attend), and gifts to give, homemade treats just add a personal and unique touch to all.
The last couple of years I have made these delightful Peppermint Truffles that have been a hit all-around!  I cannot even remember where the recipe originated from, but with ingredients like Andes peppermint crunch bits and cream cheese, you just can’t go wrong!
 
Ingredients for your truffles:
1 (8-ounce) package cream cheese, softened
1/2 cup butter, softened
2 (10-ounce) packages peppermint crunch baking chips
1/2 tsp.vanilla
1 cup confectioners’ sugar
Sugar Sprinkles
In a medium bowl, beat cream cheese and butter at medium speed with an electric mixer.  Add the vanilla and mix well.

 

Using a small food processor, pulse your baking chips until very finely chopped, then add to the cream cheese mixture.  Mix well until combined.  Add the confectioners’ sugar a little at a time until well blended.  Cover with plastic wrap and put into the freezer for about an hour.

 

 

Remove the peppermint mixture from freezer and roll into 1-inch balls, and place on parchment paper-lined cookie sheets.  Freeze for 2 hours to overnight.

 

 

 Roll in sugar sprinkles and display on a pretty platter.
This makes about 5 dozen truffles, so there is plenty to share!

  1. There are some fudges to be made and some dips. Skipping on the Thanksgiving-y things like turkey, pies, etc. We eat a bunch of junk for Christmas. LOL! These look so yummy and I know my sister, a mint lover to the max, would find them especially tasty. She's coming home in a week so I'll have to whip some up just for her.
