It has rained at least 3-4 days a week for the last four weeks solid. The ground is saturated, schools have been delayed or released early due to rising waters or tornado warnings (in January!), and we are suffering from a serious vitamin D deficiency.
I am truly treasuring the days of sunlight we are given!
When the weather is dreary I love to fix foods that burst with flavor to make our moods a little better. Have you ever noticed when the family has enjoyed a scrumptious meal together that their mood really improves?
My favorite dish to fix on these rainy days is a soup. I recently discovered a wonderful chicken and rice recipe featured in Food & Wine magazine that was not only completely delicious and filling, but also light and healthy. As always I added my own touch to the recipe, but it was met with a much satisfied husband and kids.
Ingredients you will need:
1/2 cup Jasmine rice (I used Mathatma rice), prepared by package directions
1/8 cup freshly chopped ginger
4 cups chicken broth
3 tablespoons Asian fish sauce
pinch each of salt & sugar
3/4 cup chopped cooked chicken breast
1 tablespoon + 1 teaspoon fresh lemon zest
2 green onions sliced for garnish
Directions:
In a medium saucepan, add the chicken stock, fish sauce, chicken, 1 tablespoon lemon zest, salt and sugar to the rice, bring to a simmer and continue cooking over low heat for 10 minutes. Stir in the ginger and simmer for 10 minutes longer. Ladle the soup into shallow bowls, garnish with sliced scallions, and remaining lemon zest.
For the best flavored soup, use homemade chicken broth.

Ohhh that sounds so unusual and tasty. I wonder if we'd like it…just one way to find out! It definitely sounds as if it would wake the taste buds and shake things up a bit.
Sorry to read about all this nasty rain. When you move, will you be leaving that weather system far behind?Hope so! (Guess that you won't have to be fretting over drought any time soon.)
Oh, yes, I did think of your homemade butter when I was eating the last piece of that brown bread yesterday. I know it would have been over the moon.

This looks so good and if you can believe it, I have all the ingredients, including the fish sauce! BTW…love the Keller quote on your side bar. He and Alice Waters are our biggest influences in food.
