So, I have had a history lesson of sorts today. While the media and the International House of Pancakes have declared today to be National Pancake Day, it is actually a fundraiser for the Children’s Miracle Network, first celebrated six years ago.

Raising money for organizations this beneficial always has our support, which is why Audley & I enjoyed brunch at IHOP before his flight to Tulsa earlier today.
International/National pancake day is actually celebrated on the Tuesday before Lent, the day we call Fat Tuesday. Internationally, it is commonly known as Shrove Tuesday. It is celebrated then as a way of consuming the goods that were traditionally restricted during Lent; sugar, fat, flour and eggs. Many European countries still celebrate the day, but it has never really been on American calendars.
{So, now you have had the same history lesson that I did.}
But, just in case you would like to celebrate pancake day with your own family (which I will do again tonight), here are a few ideas to make your pancake supper special for whoever joins you at the table.
Check out the many recipes featured in the Goole-Howden Courier. Just pull out an old cookbook to help you translate the European measurements to our standard metric system.

But, if you prefer a simple pancake, Gather ‘Round the Table offers a delicious basic pancake recipe. Dress these up by tossing in a few fresh blueberries in the batter, or topping them with fresh fruit and whipped cream.
Or, serve them up my favorite way …. butter and syrup. You just can’t beat it.

My husband is the pancake maker in the family. My daughter always has just a few chocolate chips in hers and I like fruit in mine, apples or blueberries. Pancakes with some thick bacon on ham slices is a favorite quick dinner for us.
