Grilled Chicken Portobello "Pizza"

Ordering a pizza of course is completely out of the question right now in my life, but the last several weeks I have really been wanting a good pizza.  Of course the problem with a “good” pizza is it is generally packed with fat and sodium through the use of excess cheese, sausage/bacon/ham, and the crust, depending on what you use.
Why is that stuff so addictive?!
While browsing a health magazine a few weeks back I saw a picture of a delicious pizza with a portobello mushroom as the crust.  Of course when it came time to make my pizza, I couldn’t find the recipe, so I just made one up!
It’s different, but it was really good, and quite filling!
 
4 large portobello mushroom caps, wash gently & pat dry
1 8 oz. can no salt added tomato sauce
10 ounces grilled chicken breast tenders, dusted with a little Italian seasoning
diced veggies:  onion, pepper, tomato ( or anything you prefer)
1/2 tsp. dried oregano
1/4 tsp. garlic powder
1/4 tsp. dried basil
1 Tablespoon sugar, or 2 Packages Sweet n Low
Fresh Basil leaves
1/2 cup shredded Parmesan cheese
3-4 Tablespoons olive oil
**Marinate your chicken breast tenders in lemon juice for an hour before grilling, then season with Italian seasoning.  Grill at 400 for until chicken is cooked through.  Dice and set aside.
**Wash the mushrooms and pat dry.  Using a pastry brush, gently coat the entire mushroom with olive oil and set aside, tops down.
**In a small bowl, mix the tomato sauce with the dried herbs and sugar.  Spoon some of the tomato mixture in each mushroom cap, spreading gently to not break the mushroom cap.  Use all of the sauce.
** Arrange your fresh veggies and diced chicken on top of the tomato sauce.
**Sprinkle 1 tablespoon of the Parmesan cheese over each pizza. Add a little fresh basil to top it off.

 

 
**Preheat your grill to 375 degrees.  Carefully place each mushroom cap on the grill and close the lid.
**Cook 15-20 minutes and remove from heat.
Garnish with fresh basil and serve with a delicious salad.
