Easter Bunny Fluff

This year is just flying by; spring is in the air, and in under two weeks it’ll be Easter Sunday!

We are planning to host friends over for the Easter holiday; friends with children much younger than our own.  Keeping that in mind I have planned a few things for our menu that will make everyone happy!  First on the list is this totally unhealthy, but absolutely delicious Easter Bunny Fluff. With only five ingredients, it is super easy to make and sure to be a hit at your own egg hunt or spring holiday gathering.

Scrumptious Easter Bunny Fluff

Ingredients:

10 cups unsalted popcorn

1 11 ounce bag of plain spring M&M’s

5-6 ounces of roasted, salted almonds (I used Emerald brand)

12 ounces white chocolate (I used Baker’s brand)

3-4 Tablespoons pink Lemonade mix (CountryTime was perfect for this)

Assembling the Fluff:

Melt the white chocolate using your favorite method.  I usually heat my pan to high, add the chocolate, reduce heat to medium and stir continually until the chocolate is 2/3’s melted.  Next I remove the pan from heat and continue stirring the chocolate until it is smooth.

In a large bowl, combine the popcorn, M&M’s, and almonds.  Drizzle the melted chocolate over the mixture.  With clean hands, mix the chocolate into the popcorn mix.

Line two cookie sheets with wax paper and spread the chocolatey popcorn mix over the pan into a single layer.  Sprinkle the pink lemonade mix over the two pans.  This adds a little touch of sour to the mix to accompany the sweet and salty.

Place in the refrigerator for about 30 minutes to set.

Peel the paper up, breaking apart the popcorn mix and serve it up in a cute little bowl.

From start to finish (including the melting & set time) this easy recipe took only about 45 minutes.  Enlist your kiddos to help and you will all have a fun time assembling this!
